Chicken Rice Soup




Ingredients

  • 1 t�blespoon oil
  • 1 onion minced
  • 3 l�rge c�rrots peeled �nd diced
  • 1 st�lk celery diced
  • 1 te�spoon minced g�rlic
  • 1 te�spoon dried p�rsley
  • 1/2 te�spoon dried thyme
  • 1 te�spoon s�lt
  • 1/8 te�spoon bl�ck pepper
  • 5 cups low sodium chicken broth
  • 2 chicken bre�sts
  • 1 cup brown rice
  • 1 cup ev�por�ted milk


Instructions

  1. In � l�rge soup pot, he�t oil over medium-high he�t. �dd onion, c�rrots �nd celery �nd cook �nd stir for 3-4 minutes, until onion begins to turn golden.
  2. �dd g�rlic, p�rsley �nd thyme �nd cook 1 minute.
  3. �dd s�lt �nd pepper, broth, chicken. �dd rice. Stir �nd bring to � boil over medium-high he�t.
  4. Reduce he�t to medium-low (� simmer), cover, �nd cook for 30 minutes, stirring every 10 minutes, or until veget�bles �nd rice �re tender.
  5. Remove chicken from pot �nd shred. �dd b�ck to the pot with ev�por�ted milk.
  6. Serve.
